projects and a recipe

i love deadlines. sometimes, a deadline is all the motivation you need to get the "job" done.

case in point: matt & i had a house warming party this past weekend, which meant that we had to do things like finish painting, install the microwave, unpack, and generally get our new home to the point that it was not just livable, but ready to receive guests. we spent a better part of last week working on "projects" and experiencing that "homeowner" feeling again. and again. and again. seriously, we had two ladders sitting in our house all week, ready for action.

unfortunately, since i was working down to the wire for the party AND because i've decided to be a bit lazy this week and take a break from "house stuff," i still haven't taken pictures of our finished home. but, here's a quick glance of our living room, ladder present, and me eating cereal.

matt took this and others to show his family our work in progress a couple of weekends ago. we're still searching for finishing touches (new blinds, a rug, frames and pictures, etc), but for the most part, our little home is put together, and, needless to say, we absolutely love it.

i think traveling to both ireland and denmark made me really appreciate color in living spaces. it's amazing how happy one feels when you walk into your home and are slapped in the face with color. (this one being "roasted squash.")

this is the gammel strand in copenhagen, bursting with life and color. how could one not fall in love with this place? this was taken our first day in denmark, which was an absolutely beautiful day. oh, the colors. they make me so happy. matt & i are incredibly happy with the color choices we made (with one minor exception...but i won't mention that here...), and i promise to stop being lazy and take real photos of our colorful home soon.

and finally, i thought i'd share one of the desserts i made for the party. i mentioned them on facebook saturday and received many requests. since i don't deliver, here's the next best thing: the recipe.

mini orange creamsicle cheesecakes

1 cup nilla wafers, crushed
3-4 tablespoons melted butter
1/4 cup granulated sugar
3 8-oz sticks of cream cheese, softened
1 cup granulated sugar
3 large eggs
1 cup heavy cream
1 tablespoon orange extract
2 tablespoons vanilla extract

1. line two standard size muffin tins with liners. spray the liners with some cooking spray for good measure. preheat the oven to 350.
2. using a blender or food processor, crush the nilla wafers. then, mix the wafers together with the rest of the crust ingredients until well incorporated but still a bit crumbly.
3. using a spoon, scoop about 1 to 2 teaspoons of the crust into each liner. press down to create an even surface at the bottom. this should fill all 24 liners. set aside.
4. mix the cream cheese and sugar together until smooth. (side note: our new microwave has a soften feature, which is amazing! i used it, and it worked so great for the cream cheese. thank you, LG.)
5. add 1 egg at a time to the cream cheese mixture, mixing well between each addition. add 1/2 cup of heavy cream with the last egg.
6. in a separate bowl, mix together the remaining 1/2 cup of heavy cream, orange extract, and vanilla extract. pour mixture into the cream cheese batter and stir until well combined.
7. pour batter to the top of each liner. the cheesecakes will rise when baking, but fall when you cool them, so fill 'em up unless you want yours to look like my picture, not quite full. bake for 20-25 minutes.
8. immediately transfer them into the fridge to chill and serve with fresh whipping cream. makes 24, if you haven't already figured that out.

  6. Hey there! I saw you over on Tasty Kitchen and decided to check your blog since you're a fellow Houstonian. My husband and I did the same thing after we moved into our house...had a party the very next day. I still wonder how we pulled it off! I LOVE your colors in your home...I love it when people aren't afraid to use color...afterall, if it doesn't work out, it's just paint.
